#CleanEating with CSN - Soft Baked, High-Protein Choc Chip Cookies
Is there anything more disappointing than dry over-baked cookies? Now I don't know about you but CSN and Vian love them ever so slightly underdone and much prefer 'soft baked' than crunchy.
Getting soft cookies isn't always easy using protein powder because it tends to dry out the mixture BUT Vian has cracked the perfect recipe...
These are high protein, sugar-free and absolutely do-die-for! Make them and tell us we were wrong, go on, I dare you ;)
Ingredients:
- 1 Scoop Vanilla protein powder (Find a wide range here)
- 30g Almond flour
- 30g Oat flour
- 10g Coconut oil (Find a wide range here)
- 2 egg whites
- 50g Vitafibre syrup
- 150g Tahini or smooth almond butter (I use Meridian)
- 1 TBS Vanilla Extract
- 1 TSP Baking powder
- Handful Chocolate Chips
Cooking Instructions
Step 1. Mix all your dry ingredients in one bowl and all your wet ingredients in a different bowl except the egg whites.
Step 2. Combine your wet and dry ingredients then mix through the egg whites. Add in your chocolate chips then divide the mixture depending on how big you want the cookies.
Step 3. Press down onto baking/non-stick paper then pop in the oven for 15 minutes on 100-120 degrees (the trick is to undercook them ever so slightly as they will harden when they cool).
Step 4. Once cooled, try not to eat the entire batch in one go, you have been warned ;)
